Lemon Meringue Ice-cream Sandwiches
A pair of egg-free meringues using Meringue Magic sandwiched with scrumptious lemon curd ice-cream!
250 golden kumara (other types of kumara will still be delicious but won't give the right colour)
¾ cup sugar
90 ml fresh lemon juice
Zest of 1 large lemon
- + Meringues
- Peel the kumara thickly – you don’t want any grey bits in your beautiful yellow curd! Dice it and steam until very tender.
While the kumara is still warm, process all the ingredients in a food processor until very smooth.
- Transfer into a lidded plastic container and allow to cool, before placing in the freezer.
- To serve, sandwich 2 little meringue cookies together with lemon curd. These can be prepared ahead and kept in the freezer until you're ready to serve them. Serve them with our delicious red-hot raspberry sauce get the recipe here
