Chocolate Brownies


These homemade GFCF brownies are sure to satisfy all those sweet cravings! They have a nutty flavour to them - minus the nuts!

Brownie Ingredients:

  • ⅓ cup Tapioca gel (see below)
  • ½ cup Chocolate Ganache
  • 1 tbsp Vanilla extract
  • 2 tbsp Agave syrup
  • ½ cup Brown sugar
  • 1 tbsp Cocoa
  • 2 tbsp Oil (your choice)
  • ⅔ cup + ¼ cup Baking mix (⅓ cup Buckwheat flour, ⅓ cup Sorghum flour, ¼ cup Brown rice flour)
  • ¼ tsp Sea salt
  • ¼ tsp Xanthan gum (optional)
  • ½ tsp Baking soda
  • ½ tsp Baking powder
  • ½+ cup Enjoy Life Mini Chips

Tapioca Gel Ingredients:

  • 1 cup Cold water
  • 1 tbsp Tapioca starch

Chocolate Ganache Ingredients:

  • 1 cup Enjoy Life Mini Chips
  • ½ cup boiling water


Tapioca Gel Directions:

  1. Combine water and starch in a saucepan, and place on the stove set to high. Whisk until liquid becomes translucent and viscous. Remove from heat and allow to cool.

Chocolate Ganache Directions:

  1. Boil water on stove. Pour over chocolate chips. Stir until smooth and glossy. Allow to cool.

Brownie Directions:

  1. Preheat oven to 180°.
  2. Line a 22cm square cake pan with parchment paper.
  3. Combine wet ingredients (tapioca gel, chocolate ganache, agave, oil, vanilla) with the brown sugar. Whisk until combined.
  4. Mix dry ingredients together and add to wet ingredients. Whisk until well combined, even, and smooth. Scrape into the parchment-lined baking pan.
  5. Bake in the oven for 20 minutes, or until edges appear dry and top of brownies are mostly firm to the touch. The brownie will have risen considerably during baking, but will deflate quite a bit.
  6. Allow to cool. Cut and serve.
