Allergy Friendly Chocolate Brownies

Ingredients

  • ½ cup (45g) desiccated coconut
  • ⅓ cup (50g) rice flour
  • ¾ cup (115g) sugar 
  • ½ tsp fine salt
  • ¼ tsp bi-carb soda
  • 150g Enjoy Life Mega Chunks
  • ½ cup (110g) coconut oil
  • 2 tbsp chia seeds plus 6 tbsps water (or 2 eggs) 
  • 2 tsp vanilla extract

Method

  1. Heat oven to 170°C
  2. Prepare baking pan (approx 19cm x 19cm)
  3. Prepare chia egg if using so it can sit and gel while you prepare the rest of the mix
  4. Put all dry ingredients except chocolate (and chia seeds if using chia egg) into a food processor 
  5. Add melted chocolate, melted coconut oil, chia eggs (or eggs) and vanilla to food processor and mix until thick and glossy
  6. Pour into prepared pan, place in hot oven and cook for 30 minutes or until cooked through
  7. Remove from oven and leave in the pan to cool for 5 minutes
  8. Remove from pan and place on a wire rack to cool completely
  9. Enjoy!
