Allergy Friendly Anzac Biscuits
Gluten free, wheat free, dairy free, egg free, nut free and soy free.
Pre-heat oven to 150°C
- 130g gluten free plain flour
- 65g preservative free desiccated coconut
- 100g rapadura
- 100g quinoa flakes
Heat on the cooktop:
- 125g coconut oil
- 2 tbsp honey or maple syrup
To the warm coconut oil and honey mixture add:
- 1 tsp bi-carb soda mixed
- 2 tbsp boiling water (mix these together just before adding to saucepan - it should fizz up)
Add the warm coconut oil mixture to the dry ingredients and mix together.
Roll into balls, place on oven tray leaving lots of room for spreading and flatten slightly with your hand.
Place into pre-warmed oven for approx. 12 minutes.
Leave to cool on the tray.
